RECIPE: SIMPLE BREAKFAST SANDWICH
Please ignore the fact that the sandwich is half-eaten and continue reading. This spontaneous breakfast recipe was the result of wanting to eat that delicious tuna melt at 8 a.m. and needing to use up the rest of a ridiculously expensive tomato so I wouldn’t feel so guilty for buying it.
Simple Breakfast Sandwich
1/4 cup egg whites
splash of milk
1/4 teaspoon garlic salt
2 slices beefsteak tomato
1 slice Central Market Jalapeño Muenster Cheese (I’m addicted)
1 slice multigrain bread
1. Toast bread until desired crispiness. Remove from toaster and set aside.
2. In a small bowl, combine egg whites, milk & garlic salt. Microwave on high for 1 minute or until eggs are cooked through.
3. Top toast with eggs, tomato slices & cheese.
4. Broil in toaster oven until cheese is melted & starts to brown.
Just came to this realization: I’m entirely too lazy in the mornings. You could definitely cook this using real cooking methods — scramble the eggs in a pan, toast the bread, top with everything & broil in a real oven until melted. Go for it, Martha Stewart. I’ll stick with the microwave.
